Grilled Peach & Pomegranate Salsa

Kerly Eckhart, manager of Middletown Farmers Market, provided this gorgeous fruity salsa recipe on behalf of the market. It uses peaches, peppers, pomegranates, cilantro and other produce that can be bought at the market. If peaches aren’t available yet, you can swap in other fruits like grilled pears, nectarines, or whatever is in season. You can eat it straight up as a snack, or use it as an addition to eggs, tacos, or grilled meat.

Grilled Peach & Pomegranate Salsa

A gorgeous fruity salsa that uses fresh spring produce that can be bought at the farmers market.

Ingredients
  

  • 2 ripe peaches, halved and pitted
  • 1/2 cup pomegranate seeds
  • 1/4 cup red onion, finely diced
  • 1 jalapeño, seeded and finely chopped
  • 2 tbsp fresh cilantro, chopped
  • 1 Juice of one lime
  • 1 tbsp olive oil
  • Salt, to taste

Instructions
 

  • Pre-heat grill to medium-high heat. Lightly brush the cut sides of the peaches with olive oil. Place the peaches on the grill, cut side down, and grill for about 3-4 minutes or until they have nice grill marks and are slightly softened. Flip and grill for another two minutes on the other side. Remove from the grill and let them cool slightly.
  • Once the peaches are cool enough to handle, chop them into small cubes. In a medium bowl, combine the grilled peaches, pomegranate seeds, red onion, jalapeño, and cilantro.
  • Add lime juice and a drizzle of olive oil to the mixture. Season with salt to taste and mix well. Serve the salsa immediately with tacos, grilled chicken, fish, or as a dip with tortilla chips.
